California Quinoa Salad

1 cup cooked red Quinoa
1/2 cup edamame
1/4 cup fresh cilantro
1/3 cup fresh mango chopped
1 Tbs coconut chopped
1/4 of a red bell pepper chopped
1/4 cup dried cranberries
1/4 cup chopped red onion
Juice of 1 lime
2 Tbs of balsamic vinegar

Mix together and chill for 2 hours! Enjoy with a tortilla or plain as a side dish.

To cook the Quinoa, first soak in a bowl for 20-30 minutes to remove the tough bitter wax that surrounds it.

Boil Quinoa for 20 minutes with a little bit of salt.
